    • @Chef Jean-Pierre As a farming student with an intrest in 16th to 19th century cooking i find that price to be resonable but a bit low. If people only knew the work involved to go from garden to supplier to chef then plate, i cant look at a carbonara or a cup of coffie without thinking about all the steps involed.

    • I calculated how much it would cost to make this and it is about $50. If the veal is too expensive double up on the beef. Also remember that you can feed 8 to 10 people with that loaf. That is $5 per person. I think that it is very reasonable! Don’t you?

  • Does he use Catsup, or Ketchup? There is actually a slight difference. For one thing, Catsup traditionally had cayenne added. Ketchup doesn't.

  • My son made this for mothers day dinner with my help, it was amazing. Made a gravy for it using beef and some of the glaze perfect beef/tomato flavours will try the chicken one in a few weeks after I get over my bacon attack

  • Riffed on this recipe had no lean ground veal at hand, and no salami or cubed ham, also no apricot balsamic vinegar. Had some mire-poix from the day before, added some fennel and cumin to the meatloaf and some maple syrup to the glaze. Turned out fantastic, Jean-Pierre is on point when he tells you to use caramalized onions it makes a diffirence and technique for using the mould to wrap the meatloaf in bacon.

  • Just ate your version last night. I was so happy Master Pierre. I'm eating it again for breakfast this morning.....got good ketchup for dipping....oh yea! Peas are another thing that's amazing in a meatloaf! Put them in the middle of the meat if you're afraid they'll dry out. Love a meatloaf with tomato's, sour cream and such mixed into the meatloaf. That bacon is amazing.....keeps the meat moist and flavorful.
